Welsh Cakes

Ingredients:

  • 225g self raising flour

  • ½ tsp baking powder

  • 125g butter

  • 60g - 75g sugar

  • 75g currants

  • 1 large egg

  • a little milk

  • ½ tsp mixed spice/nutmeg

Welsh Cakes (uncooked)

Instructions:

  1. Mix flour, spice and baking powder

  2. Rub butter into the spiced flour

  3. Add sugar and currants

  4. Bind the mixture with the beaten egg (and milk if needed) to form a dough

  5. Roll out on floured surface to 1cm thick, cut into 2-inch rounds

  6. Cook on a greased, medium-hot bakestone for 3–5 mins each side until browned

  7. Sprinkle with a little sugar before serving

Vegan Version

Ingredients:

  • 225g self raising flour

  • ½ tsp baking powder

  • 80ml cold pressed rapeseed oil

  • 60g - 75g sugar

  • 75g currants

  • Combine 1 tbsp ground flax seed and 2 tbsp water (to replace egg)

  • 1 - 2 tbsp water/plant milk

  • ½ tsp mixed spice/nutmeg

Instructions:

  1. Mix flour, spice and baking powder

  2. Rub oil into the spiced flour

  3. Add sugar and currants

  4. Bind the mixture with the Flax seed/water mix (and more water/plant milk if needed) to form a dough

  5. Roll out on floured surface to 1cm thick, cut into 2-inch rounds

  6. Cook on a greased, medium-hot bakestone for 3–5 mins each side until browned

  7. Sprinkle with a little sugar before serving
