Welsh Cakes
Ingredients:

225g self raising flour

½ tsp baking powder
-
125g butter
-
60g - 75g sugar
-
75g currants
-
1 large egg
-
a little milk
-
½ tsp mixed spice/nutmeg

Instructions:

Mix flour, spice and baking powder
-
Rub butter into the spiced flour
-
Add sugar and currants
-
Bind the mixture with the beaten egg (and milk if needed) to form a dough
-
Roll out on floured surface to 1cm thick, cut into 2-inch rounds
-
Cook on a greased, medium-hot bakestone for 3–5 mins each side until browned
-
Sprinkle with a little sugar before serving
Vegan Version
Ingredients:

80ml cold pressed rapeseed oil
-
60g - 75g sugar
-
75g currants
-
Combine 1 tbsp ground flax seed and 2 tbsp water (to replace egg)
-
1 - 2 tbsp water/plant milk
-
½ tsp mixed spice/nutmeg

Mix flour, spice and baking powder

Rub oil into the spiced flour

Add sugar and currants
-
Bind the mixture with the Flax seed/water mix (and more water/plant milk if needed) to form a dough
-
Roll out on floured surface to 1cm thick, cut into 2-inch rounds

Cook on a greased, medium-hot bakestone for 3–5 mins each side until browned
-
Sprinkle with a little sugar before serving
