Tomato Soup

Ingredients:

 

  • 2lbs tomatoes

  • 1 celeriac (small)

  • 1 onion

  • 1 carrot

  • 2tbsp tomato puree

  • 2tbsp olive oil

  • 1.5 pint chicken stock

  • 2tsp sugar

  • 2 bay leaves

Instructions:

  1. Dice all of your veg. Add these to a pot with olive oil. Cook on a medium heat until veg starts to soften.

  2. Add the remainder of the ingredients to the pot and bring to the boil. Turn the heat down and simmer (for around 20mins).

  3. Blend your ingredients and your soup is ready to serve (can also be served 'chunky').

Tip: remove the hard part of your tomatoes, vine attachment, if using large beef tomatoes.
