Pancakes

Ingredients:

 

  • 2½ teaspoons baking powder

  • 1 pinch of salt

  • 1 teaspoon sugar

  • 2 large eggs (beaten)

  • 30 grams butter (melted and cooled)

  • 300 millilitres milk

  • 225 grams plain flour

  • butter for frying

Simplified Instructions:

  1. Blend all ingredients in a blender.

  2. Melt butter in a frying pan and fry spoonfuls of batter (pancakes size!)

  3. When bubbles form on top of the pancakes, flip and cook the other side for about 1 minute.

  4. Makes about 16 small pancakes.

 

Serve with a spoonful of Greek yoghurt, raspberries, blueberries and a drizzle of maple syrup. You could also add some seeds and nuts.
