Noodle Broth

Ingredients:

 

  • 1 inch garlic, finely grated

  • 2 garlic cloves, minced

  • 1 medium carrot, finely sliced

  • 2 spring onions, finely sliced

  • 1 bok choy, finely sliced

  • 1 nest of rice noodles

  • 1 tbsp soy sauce1 tbsp olive oil

  • 500mls bone broth

Instructions:

  1. Heat the oil in a pot and sauté the vegetables, garlic and ginger for 5 minutes.

  2. Add the soy sauce and bone broth to the pot. Simmer gently for around 10 minutes

  3. Prepare the rice noodles in a separate pot according to instructions.

  4. Add the rice noodles to the broth, stir and serve.

use a veg peeler to finely slice the carrots
