Noodle Broth
Ingredients:

1 inch garlic, finely grated

2 garlic cloves, minced
-
1 medium carrot, finely sliced

2 spring onions, finely sliced
-
1 bok choy, finely sliced
-
1 nest of rice noodles
-
1 tbsp soy sauce1 tbsp olive oil
-
500mls bone broth
Instructions:

Heat the oil in a pot and sauté the vegetables, garlic and ginger for 5 minutes.

Add the soy sauce and bone broth to the pot. Simmer gently for around 10 minutes
-
Prepare the rice noodles in a separate pot according to instructions.
-
Add the rice noodles to the broth, stir and serve.

use a veg peeler to finely slice the carrots
