Chocolatey Brownie Balls

Ingredients:​

  • 100g walnuts, smashed up

  • 40g almonds, smashed up

  • 1 tbsp nut butter

  • 2 tbsp cacoa powder (or cocoa)1

  • 6 dates (soak in water for 10 minutes before using). I use medjool dates.

  • Finely grated coconut OR around 8 squares of dark (85%+) chocolate - depending on how you want to finish them off

Brownie Balls

Instructions:

 

  1. Blend peanut butter, smashed walnuts, chopped dates (stones removed) and cacoa powder in a food processor until it forms a dough. (You will need to scrape the mixture from the sides a few times.)

  2. Stir in smashed almonds.

  3. Roll the mixture into bite-sized balls.

  4. To finish off roll in finely grated coconut or dip in melted dark chocolate.

  5. Refrigerate for 20 mins before serving.
